Writing through Science Group Bread RecipeNo Knead Bread
  • 2 teaspoons active dried yeast
  • 3 cups plus 1 tablespoon luke warm water
  • 2 teaspoons honey
  • 3 cups of high grade white flour
  • 3 cups of mixed grain flour
  • ½ cup sunflower seeds
  • ¼ cup rolled oats
  • 2 teaspoons salt

Grease a 30cm loaf tin with oil, or line the tin with baking paper. We used two tins (25cm).
Dissolve the yeast and honey in 1 cup of warm water and allow to sit for 5 minutes until frothy.
Combine dry ingredients in a large bowl and make a well in the centre.
Pour in the yeasty water plus the remaining water and mix well.
Set aside in a warm spot for 4-6 hours or until the dough is well risen and has lots of holes in it.
(We covered the dough with glad wrap and a tea towel and placed it in a warm place- hot water cupboard).
We split the mixture into two tins. (the mixture was very sticky)
Preheat oven to 210 C fanbake and cook bread for 35-45 minutes until the loaf is firm and sounds hollow when tapped.
